I like the look of the "graphite" appearance option in the General system preferences pane on my Mac mini, but I would prefer that it maintained the traffic light colouring to the sizing buttons on windows. Does anyone know of a workaround or app that could return that feature?

It sounds like you are wanting to know what display options are available for your Mac. We can help with this.
When you change to Dark Mode on your Mac, the red, yellow, and green icons in the top left corner of the windows should remain the same color. You can find out more information about using Dark Mode here: How to use Dark Mode on your Mac
If you are not seeing these colors, there may be another setting prohibiting this. Try switching to "Light" then back to "Dark" to see if that makes a difference.
