Usually backup my phone with itunes but with this lates updates on itunes and on macOS Catalina, my phone won’t show up! Don’t know what to do. Already tried restarting both phone and mac and changing usb port.

Have you tried a different cable (even though it shows up in system information)?
When you plug your phone into your MacBook, do you have your iPhone awake and on the home screen?
Does a pop up show on your phone asking you to trust the MacBook?
And you are looking in the right place in Finder? I just plugged mine in and it shows up under 'Locations' and it shows up as the name of my phone.
If you are still stuck, like Carl_Franz has suggested you may need to contact support. It is really late here and way beyond my bedtime!

Yes I checked Finder as well, not showing up there either. And I read the troubleshooting section. Problem is ,under apple menu I don't have system information or reports. There's only system preferences and theres’s no USB section in there to choose and both y phone and mac are up to date.
Did you see the part in the article that says to press the option key when you click the Apple logo?
I am on my MacBook Pro using Catalina right now and if I click on the Apple logo and keep holding down then tapping the option key.. I see 'About This Mac' toggling back and forth with 'System Information'
I don’t understand how I should do that.I click on apple logo and there are no option keys there. Only 10 things to choose.

and it doesn’t scroll any further down 🤔
Are you sure there's no new security app or ad-blocker (they can block pairing) on both? Also, check if it will show up with iMazing trial just in case (worked for me when iTunes couldn't pick up the phone for whatever reason, may help to narrwo down bad luck with hardware).
UPD: Option key is on the keyboard near Cmd key ;)
I don't have a MacBook Air.. but all my Mac keyboards have been roughly the same..
Look at your Keyboard.. From the spacebar, if I go right or left, I have a 'command' key. If I go one more key right or left, I have an 'option' key
Do you not have this on your keyboard?

Well... Check if iMazing will pick it up. If yes -- I would say it's a case for Apple Support (or just clean system reinstall). Also, any chance that you're on iOS beta?
Some how this time that I plugged in, it decided to show up where it was supposed to. Thanks for your help and time.
