Hello Colusaca,

It sounds like you're seeking some information on iOS updates. We will be happy to assist.

We want to begin by saying that it is advisable to keep your iPhone up-to-date. What updates are issued, they ensure that your iPhone is secure and add fixes to help your device run better.

That being said, you can turn off automatic updates are using this article: Update your iPhone, iPad, or iPod touch

Specifically, you want to look under, "Customize Automatic Updates", and turn those off.

To remove a pending update, go to Settings > General > iPhone Storage > Check for the update in the list and tap on it > Delete Update

Cheers!
