Is it Safe to Restore From a Backup if Checking for Software Issues?

I had to restore my iPhone to FS in order to check if there are software issues. Can I restore my phone with a back-up from 'music'/'iTunes' or will that only load the same software back onto the device?

the restore process has been going on for 20 hours without a progress bar or any indication anything is happening. How long should this process take? When using iTunes to transfer music to my iPhone XR, I got the message that said my phone's system needed to be updated. So I chose the update option. That was 18 hours ago. How long should this process take? I see no progress bars - just a message in iTunes that says "preparing iphone for software update" at the top of the screen, and "iPhone recovery mode" and " iTunes is restoring the software on this phone" in the body of the screen. Does this seem like a long time for this process?

No, it will restore your phone to the latest version of the OS and also download the apps fresh.
