How can I choose which payment method to use for iTunes / App Store purchases on my iPhone?

I have several payment methods saved in my account (Settings > My Name > iTunes & App Store > View Apple ID > Manage Payments) but I don’t want to use the same method for every purchase. How can I choose which one to use prior to making a purchase?

I think if you want to manage which card is used for each transaction you might have to rearrange them each time?
