Is there a way to disable the App Library, so that I don’t have to see it at all? I don’t have many apps, don’t need them categorized, and don’t need to search them, so I’d prefer to just turn it off altogether so that I don’t see it if I happen to swipe right too many times. Thanks!

Go to Settings > Home Screen
Chances are the setting Add to Home Screen is not checked, but App Library Only is.
Change the setting.
I guess Apple disagrees with you. But you can tell them how you feel by providing feedback through the feedback link which pas been posted multiple times in this thread.
So carry on using the folder you’d presumably already made with those apps in. Nothing in iOS14 stops you doing this.
You can’t turn it off but you can ignore it and carry doing what you were doing before.
You also don’t have to use widgets if you don’t want to.
Sorry, but it just doesn’t. App Library has no impact on how you previously used your phone....whatsoever. It’s an additional feature which you can use or ignore as you prefer.

I think you misunderstand. No you cannot organize any apps in the app library. The listings in the app library are arbitrary, and locked by god. No one has any freedom to change them.

The APP Library is NOT needed for me, please give us choice of DISABLE or ENABLE in case someone may like the feature. BUT I DO NOT see what would be good ways of using it.
