I see Apple TV app supports spatial audio. But it does not seem to work with anything else. Are there any other supported apps for the same?

It is up to the app developer to support it
Many developers claim they were caught unaware by the iOS update.
More apps may support it in the coming weeks.
I don't know of any official list of supported apps at this time.

As far as I know Apple Music does not deliver content in Dolby Atmos, 7.1 nor 5.1 because its music and I never heard of music being distributed in other then Stereo and that’s why no Apple Music
