On series 3: Will unpairing, setting up as a new watch, updating WatchOS, unpairing again & restoring from backup update the WatchOS for the backup?
Watch S3:
I have just unpaired/re-paired as new. Then unpaired again/ tried to re-pair from backup, but the restore failed.
Restore failed with Error Domain=NBErrorDomain Code=0 "(null)"
So I have to set up my S3 as new again before I can try to update to watchOS 7.
I actually tested this after I posted this and found that it does indeed work just fine. The new WatchOS 7 supersedes the previous version.

you should try resetting watch and then setting it up again
Then try to update it and it should work
