Probably because of your wifi connections and the thousand of other people who are also trying to update.

My download took 9 min.. but then it took ~45 min preparing. IPad gen 6

Goodness me ... my update from 13 to 14 completed in an amazing 25 minutes after initiating the update download when I went to bed on Tuesday night.
