I don’t need the cellular connectivity or the family share option but when I try to purchase the 44mm Stainless Steel with the Milanese Loop, it only has the option for GPS+Cellular.
Any idea on how to order just the GPS version?

Are you buying the low end Aluminum, or one of the other models (Stainless steel, Nike, etc...) Those models only come in Cellular models.

Because ALL Apple Watch models have GPS. It’s a standard feature, not an option. You cannot purchase an Apple Watch without GPS.
The stainless steel and titanium versions are only available with cellular capable hardware. However you are not under any obligation to purchase cellular service for them. You can use them as a GPS only watch.
