Turning off data source for Health App
I want to turn off a data source so that it doesn't contribute any more data for that category. I tap the checkmark next to the source and nothing happens - the checkmark is still there. How do I fix this?

Welcome to the Apple Support Communities. We understand you want to turn off a data source and will explain.
Some data sources can't be removed, but some items are managed from the Watch app if you use one: Manage Health data on your iPhone, iPod touch, or Apple Watch
If it's a specific app, you can check the settings of the app or remove the app entirely.
