Apple Watch "unable to configure data plan" error

Cannot connect my Apple Watch with my O2 eSim. After restart of watch, Watch app on iPhone shows an attempt to activate the data plan but always fails with the same error: "unable to configure data plan" and data plan shows as "not in use"

Unable to update Watch needs to update but won’t connect to the internet. Can’t skip or finish pairing. Error just says to connect to the internet try again or start over. The watch won’t pick up my phones data or any Wi-Fi.

Try calling O2.
