In the App Store, tap your user avatar in the upper right, scroll all the way down and you should see “sign out” (underneath all the recently updated icons).

Thanks! I neither use Family Sharing nor have access to accounts in multiple countries so I wasn't sure if anything had changed.

You can try setting up Family Sharing between the IDs if you want to be able to share purchases made with the IDs.
