Remove carrier plan from apple watch

I don’t see “remove carrier plan” on my Apple Watch but I definitely have one. I am looking at instructions on the web page to get my watch ready for trade in. I have unpair Apple Watch but don’t see remove carrier plan at the Information tab on the watch app.
