I just want to group my apps the way I did in folders - My weather app doesn’t belong with my Reddit app. Mail doesn’t belong with my banking or calendar apps. Find my doesn’t belong with my calculator or ring app. Etc.

You can't. The App Library is automatically generated based on the App category set by the app developer for each app and is not customizable. There is no point in mirroring your own grouping on the home screens, as its meant to be a different way to find and access apps. Its designed to offer a different way to view apps, not a way to reorganize apps the same way you already organize on the home screens.
Your Homescreens already let you group apps the way you want to. App Library is a different option and also a way to access the Alphabetical list of apps and quickly search for one.
Also, the groups I see make sense based on the apps inside them.
