Q | Brand New MacBook Pro (2020, 16') Shuts Down Randomly

Log file above, shuts down randomly every 2-3 days .. any ideas?

MacBook, OS X 10.11

Since it's brand new (e.g., less than a week old), I'd contact Apple Support first.

I'm not seeing anything in your log that would point to anything software or peripheral.
