If I buy a new Apple Watch Nike Edition I just want to know if I can delete the Nike Run Club app from the Watch? I don’t use it but it’s the only way to get the band I want bundled with the Watch at time of purchase.

If you have a Nike edition Apple Watch model, the Nike Run Club application is built into the software and cannot be permanently deleted. You can find more information on built in apps that can be deleted here: Delete built-in Apple apps on your iOS 12, iOS 13, or iPadOS device or Apple Watch
Now if you don't want the application to appear on your Apple Watch, you can hide it from showing on the home screen. To do this, go into the Watch app on your paired iPhone, then under the My Watch tab select Nike Run Club. Once you have that page up, turn off the button next to "Show App on Apple Watch".
