We use an App on our i-pad that is not updated to work with the new ios 14.0. I have already updated the software on the i-pad we are using and now the App is not working. How can I go to the previous version of ios?

It isn’t possible to return to a prior version of iOS/iPadOS. If an App is not functioning as expected, you need to seek advice from the specific App Developer - or simply wait for the App to be updated with support for the current version of iPadOS.
Whenever a major update occurs, it is not unusual for some Apps to malfunction. Whilst App Developers have every opportunity to update their Apps in readiness for new releases, some choose (or fail) to do so.
We have contacted the App developer and they advised to not update to the new ios software, as there is no new updates coming out anytime soon. This App is important to the workflow of our clinical eye examinations. Unfortunately we were not aware of this until we already updated one of our i-Pads and now we can't use it.
What is the way to go back to a previous ios version.
To reiterate- it is not possible to return to iPadOS13.
Whilst I would obviously like to be able to offer you a different response, I can only communicate what is possible. Sorry.
