The GPS only version can do Everything the cellular model can do AS LONG AS your iPhone is nearby. The Cellular model can leave your iPhone at home, while you go for a walk, run, bike ride, etc...

The GPS model can track your exercise away from the iPhone, and then when you get back to your iPhone, the Apple Watch will sync the data to your iPhone's Health app.
