Apple Watch gps and gps+cellular

what is the difference between Apple Watch gps and gps+cellular version? Can I make a call with gps version or I need cellular version?

You can make a call using your GPS only Watch as long as it is in close proximity to the paired iPhone. The Cellular Watch can do it even if the iPhone is far from it.

Yes, the cellular Watch has eSIM support. Most cellular phone companies attach a "cheap" plan for the Watch.
