Sidecar keeps Losing Connection

Video of issue is right here: https://www.youtube.com/watch?v=-xxpkVtsEiY

I have MacBook Pro 2020, 13 in and a 2019 iPad Pro 11 in, so both are capable of running Sidecar, and earlier this year (July & August) it would run it smoothly without any issues.

My WiFi is strong and pretty fast, however when I try to use Sidecar now, it keeps flashing between Sidecar and the "Lost Connection" error screen. It runs smoothly when it is connected for the few seconds before the error screen pops up. I have also connected the USB-C cable to the MacBook directly to see if that helps, but it doesn't.

It is very annoying and frustrating, and would hope that there's an answer out there to resolve this issue.
