Ever since I updated my iPhone X to iOS14, the Fitness Gaming workouts have not been syncing to my fitness app on the phone. I can still see them on my watch, and the exercise minutes are not impacted.

Are you talking about one of the Workouts in the Workout app on your Watch? It was the "Gaming" that confused me.
Unpair and re-pair your watch to your phone.
FYI - my apple watch is a series 5. :)
Is "Fitness Gaming" an app?
It’s a workout type. Like walking or elliptical.

I'm glad it's working. There appear to be some issues with iOS 14 and workouts, mostly around the maps not showing.
