My husband will be using my iPhone, that has active service and leaving me his iPhone, that does not. If I sign into his iPhone after signing him out, so I have access to my apps, etc., what is the best way, if possible, to do this so when he signs back in, his phone will be back to how it was when he left? Could I do a backup and do a restore from backup?

Yes, that’s exactly the right thing to do.
