If I'm not mistaken the SE was released after the 6S so it should be ok

Yes it is. But if you search some technical specifications, everywhere are mentioned all models since iPhone 6s, but nowhere is mentioned iPhone SE 1st gen. This phone is everywhere missing.

The 1st gen SE came later than the SE and the SE Is on the list of those phones that can load IOS 14

You need IOS 14 to run Watch OS6

Watch SE runs Watch OS6
