Which Apple branded monitor would I use to connect to a MBP Early 2015 to use as main screen? Would it connect to the Thunderbolt port? No idea how to do this or what I need.

Just about any monitor will connect.
Get any monitor with a high resolution display and set the monitor to use that resolution.
Someone else will have to come along and advise you on an Apple specific monitor. I don't see any need for using one.

Didn't buy the monitor yet. So question is if I should be buying a monitor that has the original Thunderbolt connection since a MBP 2015 does not have Thunderbolt 3. And by 'display port', is a Thunderbolt port a 'display port'?
Did you read the info at the link I provided? I can't tell you what connector to use because I don't know what connectors your monitor has. Typically the best resolution would be achieved by using a display port. But if your monitor does not have a display port you could use its HDMI port. HDMI provides lower resolution than display port.
But which Apple Monitor Model would I use and how would it be connected? Thunderbolt? HDMI? I would want the same quality Retina display as the MBP has itself.
But what about the connection? Would HDMI be better than thunderbolt or vice-versa?
