My daughter has a new-ish (this spring) XR and for some reason, "accounts" disappeared from the gray key. This means she's getting her brother's emails, but can't switch to her own gmail account. Any idea why this happened and how to fix it?

Here is How to create a new Apple ID - Apple Support, and you can then configure and use Family Sharing to share music, apps, storage, and some (many) subscriptions.
As for visual differences, see if y’all are running the same software versions, or if some of y’all have (for instance) updated to iOS 14 and some have not.
Are y’all possibly sharing the same Apple ID? If so, then getting these details intermixed is to be expected, as an Apple ID is intended to be per-person, and does not provide further separation.
OK. Problem is I'm not sure how to get her own apple ID but keep her on my itunes account. Also, why does the gray key look like that????
