My watch stopped recording Vo2 max data after I upgraded my phone and watch to latest OS ie ios14.0.1 and watchos 7.0.1. Earlier, I was facing excess battery drain after upgrading which I was able to fix by unpairing the watch and setting it up again as new watch. Now its working fine except this anamoly that it stopped recording vo2max.

This should correct most issues
For the VO2 Max, I had to reset my Fitness Calibration Data and then do 2 workouts.
It is now working again.
Watch>General>Privacy>Reset Fitness Calibration Data

Apple Watch series 3 here. I got the same problem.
Just want to add that the Vo2max does not have my currently paired watch as a data source.
I have unpaired and paired twice.
