Trying To Open an Application That Apples Does Not Approve Of

I am a great fan of MakeMKV. It is always in Beta, always free, and they update frequently. So far, I have managed to open each version in MacOS by clicking Alt + Open, but not this time. I get a similar message and I cannot bypass the block with Alt. Any suggestions?

I can never remember the exact sequence to do that. So when I get that "you can't install" message, I open

System Preferences > Security&Privacy > General ...

... and try again.

With that panel open, the (Open anyway) button appears in that pane.

I click on that and it goes forward.

Thank you, Grant, for help on many different questions over the years!

In the process of asking the latest question, I have been befuddled by the system repeatedly rejecting my ID, e-mail address, and password (not for the first time). I created two new IDs to log back in, the latest being GeorgeGeorgeGeorgeGeorge. But I see that the system still thinks I am George31416. And also George(etc.). That begets some questions:

Why does the system periodically reject valid IDs, e-mail addresses, and passwords?

Why is the system keeping the ID George31416 active when I replaced it twice?

As an exclusive Mac user, occasionally I have to identify myself to Apple for matters beyond Apple Forums, as do you all. I am dreading the next encounter with Apple Police, because I no longer know who I am.
