Let me filter out a few of the key points here and ask some more questions.
It is unlikely any of us who regularly offer technical help will have identical setup.. be assured we have dealt with loads of printer issues though.
none of my devices can see it on the network. I can print to it from my Mac but it does not show up as device on the LAN and Canon's own app can't find the scanner.
So the printer is connected by ethernet or wireless to the Airport?
Airport is your main router (confirm)?
Do you have any other routers, switches or network gear, access points.. apple express for example?
Mac running what OS??
Are you printing using the canon app.. or directly to IP address or AirPrint/bonjour?
How exactly is the Mac able to find the printer if it does not appear on the network? There has to be a mechanism for it to work.
Perhaps a screenshot of how the printer is showing in the Mac.
eventually we disconnected it from from the LAN, turned on the printer's internal wifi, loaded an app on the iPad, which then could find and scan to it.
So this is using the wifi in the Canon in ad hoc mode.. and connecting the iPad directly to the printer's wifi but without any connection to the main network (confirm)?

It appears to me that the App actually goes through 3 stages..
Bluetooth connection to the printer.
Then wifi connection to the printer which is configured through bluetooth.
Then get the wifi in the Printer to connect to the router.. this means the wifi is stepping from ad hoc mode to infrastructure mode..
Can you please watch that video and give us a time when it fails.. that would also help loads for us to understand what is going on.
Note the name of the wifi is short, no spaces and pure alphanumeric. I STRONGLY recommend you use those rules for your Airport if you haven't already. I am also guessing it is most likely only working on 2.4ghz so up to you if you reset it for 5ghz.
I also STRONGLY recommend a password that is pure alphanumerics .. 8-20 characters long.
I know it is strange but a common problem is clients on 5ghz cannot communicate to clients on 2.4ghz.
It is one reason using different names on each band is worthwhile even as just a test. Use your client device on 2.4ghz .. same network the printer is on.. as you go through this process.. of configuring the printer connection to wifi from App.
Tell us how all that goes and answer the questions.

I think your problem is the canon install app is not actually working with Catalina.. so it is not AE issue at all but rather Mac OS issue.

I cannot really help if the issue is strictly a Canon App not working on your Mac OS install.
The fact that iOS is working shows Canon has not kept up with Apple OS changes.. which I have to say is hardly a surprise.

Yes.. I agree.. you will need to get back onto Canon and keep pushing for a solution or return the printer as not fit for use.
Getting printers to work with Apple routers is often a problem.
You are not giving us much info to go on..
Is the problem you cannot get the printer to connect to wifi?
Or are you having problems once connected. Printer not showing up until you power cycle it or airport or both?
Give us exactly what is going wrong.
Also if the issue is printing not connection / network then what model airport.. how old is the airport and printer and is it main router or bridged.. if bridged what is the main router????

If you are having a problem, what specifically is the problem?
Sorry for being vague. My network has (not all at once) 2 macs, 2 iPhones, an iPad, Apple TV, a HomePod and a Cannon MP990 connected and accessing the internet, with no problems. I just added a Canon TS6320 to take a load off the 990 and none of my devices can see it on the network. I can print to it from my Mac but it does not show up as device on the LAN and Canon's own app can't find the scanner. I spent an hour with a Cannon tech trying find the problem and eventually we disconnected it from from the LAN, turned on the printer's internal wifi, loaded an app on the iPad, which then could find and scan to it. At that point the tech said since it began working once we bypassed my network that it must be a com problem with the airport extreme. If you don't consider the other devices on the LAN it is easy enough to jump to that conclusion but when eight other devices have no problems, for me it is a leap. I was hoping one of you might have some insight into this conundrum. Airport extreme version 7.9.1. Thanks.
Thank you for taking the deep dive, I will try to make more sense. All of my devices are connected to the AE, no other routers or hard wires. Running 10.15.6. Thanks for the videos, I had not seen them, here is why: the Canon instructions are for connecting to a computer and smartphone. You download an installer for Mac OS X (Easysetup) answer some Qs and voila, you are done. I never looked at setup with iOS as it is just a sidebar in the instructions.
The problems started at the get go, the installer could not auto install for reasons still unknown. I followed Canon's directions for a manual connection and setup the printer using System Prefs. All looked okay until the warts appeared. I have printed a Canon network config and everything looks proper and it reports No Problem. Here is where we are now.
From the Mac, I can print and look at supply levels. But, the printer does not show up in the Finder sidebar as a connected device. Here is a screenshot, the device you see there is the old MP990. Additionally, neither Image Capture nor the Canon Scan Utility can find the devise. Although, Airport Utility lists it as connected.
Now, here is the kicker. Since viewing the iOS videos, I have played with the Canon Print app on my iPad and I have the printer and the scanner working well from the iPad, on the same network (not ad hoc), sitting side by side with the Mac. Which, it seems to me. blows holes in Canon Techs theory that it is a com problem with the AE. But, if I knew squat I would not be here.
