I bought myself a new phone a month ago but I have the old phone still. I want to switch my apple care to my new phone. Can I?

You, you will have purchase AppleCare for the new phone. You can request a credit if you want to cancel AppleCare on the old phone—>Cancel or change the payment method for your AppleCare plan - Apple Support
