Family sharing individual payment methods
As an adult can I add my own payment method, although I am not an organisator of the family sharing, if yes. How can I select whether I pay with my own credit card or with the family sharing credit card ?

When you are in a Family Sharing group, the organizer is responsible for having the main payment method for the entire group, however, family members can Add funds to your Apple ID to pay for their purchases before the organizers credit card is used.
