See the following for which built-in apps can be deleted in iOS 14: Delete built-in Apple apps from the Home screen on your iOS 14 or iPadOS device or Apple Watch - Apple Support

For built-in apps that can't be deleted you can remove them from the home screen. Touch and hold the app until a menu appears and then tap Remove App. It will be removed from the home screen but will still be in the App Library.
