Welcome to Apple Support Communities. We see that some of the keys on your iPad Pro are blue and you'd like to have them return to their regular color.
We'd like to begin by trying to isolate the issue. First, see if the blue color is appearing in other apps or if it's only in Notes.
If it is occurring in other apps as well, check and see if you have any third-party keyboards enabled through the keyboard settings. This article will show you how to check those settings: About the keyboards settings on your iPhone, iPad, and iPod touch.
If you find any third-party keyboards are turned on, try turning them off, or deleting them and see if there is any change.
If there aren't any third-party keyboards, then follow these steps:
1 - Quit the Notes app (as well as any other affected apps) on your iPhone with these steps: How to force an app to close on your iPhone, iPad, or iPod touch
2 - Restart your iPhone & test again.
3 - If the issue persists, go to Settings > General > Software Update and see if there are any available. As of today the latest iOS version is iOS 14.0.1. If you find you need to install the update, first backup your iPhone with these steps: How to back up your iPhone, iPad, and iPod touch.
4 - Update your iPhone, iPad, or iPod touch & test again.
