Hello, i have an iphone 11, i was planning on getting an apple watch but my carrier does not support the watch. I cant unlock phone until feburary 2021. Can i purchase the apple watch gps only and still connect it to my phone and then in February when i switch carries add the cellular to it?

You can purchase the Cellular + GPS model and not connect it to a carrier.
Use it as a GPS only model until such time you have a carrier that supports Cellular
If you purchase the GPS model now and wish to add Cellular at a later date you would need to purchase a new watch.
