Restoring Iphone with esim and i dont back up previous datas can still keep the esim working?

The answer is YES. The eSIM plan on your iPhone will survive a full restore of your iPhone. Note that if you are asked what you want to do with your installed eSIM(s) then choose to keep the plan(s).
