Apple Watch routes not being tracked

In my Apple Watch in workouts my routes are not being tracked it marks the start but that is all I’ve followed various solutions un paired my watch re installed from back up I have re installed as new still not fixed I’ve toggled on off location services ? Nothing seems to fix it I have iOS 6 on my Apple Watch series 1

and iOS 14 on my iPhone 7

So last iOS update and it has fixed the route tracking no backup required

How will wiping my phone then reinstalling from a backup help as surely I will be reinstalling what I have just wiped off
