Trying to create a book file in Pages and the Books template is not where the support information says it should be, and I have yet to find a solution. Any tips?

Have you upgraded to iPadOS v14.0.1, and installed Pages v10.2 for iOS. The Mac Pages v10.2 version has Books templates in Portrait and Landscape format, and so should the current Pages v10.2 for iOS. I do not use Pages on iOS, only on the Mac.
