Doesn't your phone keep all the watch data? As I know after upgrading all your data will remain. I don't think you need any extra things to do to save them.

When you set up your new watch it will give you an option to restore from backup and keep all your settings on your new watch! I have even set mine up "as new" and the data still remained in the activity app as well.
