I need to run Mojave because my version of Avid Media Composer (2019.12.0) is dependent on QuickTime components that were deprecated in Catalina. It's the setup that I use currently, two partitions, I startup in Mojave when I need to edit. I am not in a rush to trade up from my 2013 MacBook Pro, especially if I cannot use my new hardware for my livelihood.
No. A Mac cannot boot from a macOS version that is older than the one current when the model was released, and all current MacBook Pros came out after Catalina.
Why would you want to run Mojave?
In that case, you should update/upgrade your software, if you want/need a new Mac.
