Hi - I'm trying to find a specific email that was backed-up on Time Machine in the Summer. Since then, I have deleted that whole email account and no longer have access to it. I have also upgraded my OS system to Catalina. Now, when I open Mail and then Time Machine, it shows that there has been a back-up in July but I can't get access to it. Any ideas?

You don't go to the TM drive. You find the Mail/V7 folder in your Home/Library and then enter Time Machine via the TM menu:
Once in Time Machine you go back in time to the date you want to restore. Control (right) - click on the A7 folder and select "Restore A7 to …" from the contextual menu.
Thanks - I can't find my email folders. It goes to Backups.backupdb / MacBook Pro / Date of backup / Mac HD / Users / My name but no User / Home / Library / Mail / V7. Any ideas?

Enter Time Machine and navigate to your User/Home/Library/Mail/V7 folder for the date on which you believe the email will exist and restore the V7 folder to the desktop by Control (right) - clicking on it and selecting "Restore V7 to …" from the contextual menu.
Then go thru the mailboxes and use Quicklook to find the email you need. Select an .emlx file and hit the Space bar to view it.
It can't be done from within Mail.
