I wanted to buy my kids I watches for Xmas. I have xfinity for a mobile carrier, who I don’t see listed on supported family sharing carriers yet. I don’t want to have to pay for a new line etc. Can they use the watch to call message etc off of family sharing on my line?

Since Xfinity is an NVMO, they have to renegotiate their contracts with the carriers they use, before they can offer Apple Watch Family Setup, and each Apple Watch get its own phone number.
