I'm planning to go swimming with my Apple Watch 5 and can I go for a 2 hour swim without the watch suffering from water damage? I read that it can be submerged for 50 feet for 30 min. Does this mean the maximum number of min to swim with it is 30?

No, the 30 minutes number is just how it has been tested for certification.
Its not a limit for how long you can use it in the water.
