Erasing data for iPhone 7

I removed the Sim card from a damaged iPhone 7 into a replacement iPhone 7 but Assurant Insurance says I need to wipe the phone clean. How do I do that without erasing the data in the new phone?

Does the old iPhone still turn on? If so, start here - What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support. Following these steps won't affect your new phone in any way.

If it does not work, then let Assurant know that you're unable to wipe it because it won't turn on.
