All of my video applications are running slow and erratically after OS Catalina 10.15.7 update. The update basically broke my new Mac Mini that I purchased this summer. Any Ideas?

Thank you. The Combo updater is a solid idea that I forgot to try but the problem ended up even simpler than that. I just needed to reset my SMC following these steps:
1 Unplug the power cord from the back of the Mac.
2 Wait 15 seconds, then plug the power cord back in.
3 Wait 5 seconds, then press the power button to turn on your Mac.

What video applications are you using? You might also try the macOS Catalina 10.15.7 Combo Updater to see if it will correct the problem.
