Hey i was setting up my new phone and accidentally used a back up of my iPad not my phone. Is there a way i can restart the whole back up process and do the back up from my old iPhone?

See the instructions here, Restore your iPhone, iPad, or iPod touch from a backup - Apple Support You will need to erase all content and settings on the phone and then restore to the correct backup.
