I have a projector with an Apple TV 4k connected.
My idea is: if I buy a soundbar with Airplay, having HDMI ports in, could I stream from the bluray player to the soundbar to the Apple TV with Airplay?

No, that will not work. Soundbars that support AirPlay, are AirPlay receivers (and audio only), not senders.
