I live in Ireland and for years have subscribed on my Mac and iPhone to the Irish national holidays.
Right now they show in 2020, but when I click forward to 2021 they are not there.
I've tried about 10 online tips but none have worked.

I used the built-in calendar: in Calendar->Preferences, checked "show Holidays calendar", and it too only goes up to Dec 31, 2020. No events at all in 2021.

The one that has worked up to now is an Apple calendar webcal://files.apple.com/calendars/Irish32Holidays.ics
They've previously managed to do it in a timely manner.
I just subscribed to that calendar, as well the holidays calendar for my country (Portugal) and neither of them has anything in 2021. It looks like they haven't been updated (yet?).
So I abandoned Apple's holiday list and imported an independent one. Works just fine.
Possibly because these haven't been entered yet?
You should probably contact whoever publishes these calendars.

All of their apps have a built-in Holliday calendar you can show from the preferences, but those are different than the ones you can subscribe. They go out to end of 2022. They may have finally dropped support for the other calendars.
Since the built-in Holliday calendars include a bunch of garbage that is of no use to me as a "Holliday," I created my own on iCloud and subscribe to that on all of my devices. Most Hollidays can be created using the repeating tools provided, but those that are based on lunar activity require you manually enter them. It takes maybe 30 minutes to set up your own custom calendar that has the entries you want to see and none of the useless stuff (including going out several years with lunar-based dates). I just used the calendar in Terminal to figure out those for about five years out.
I did the same and it went to 2022.
But, I still wouldn’t expect them to continue updating the old iCal Shared calendars.
