I locally backed up my iPad Pro 10.5-inch and restored it (iPadOS 14.0.1) - all my PDFs in Books and notes in Notability are gone. I did not save them to iCloud or other cloud-based services beforehand. Is there a way to retrieve these files?

If you restored your device without backing up to a computer, and did not store your missing content in iCloud, the would be no way to retrieve the missing content.
