Save files into my MacBook instead of iCloud?
How do I making sure that all my photos, work files, documents goes to save into my MacBook instead of iCloud?

To be absolutely "sure" don't sign in with your AppleID on the iDevice you're using to take photos with and/or creating documents and/or work files with? But if you do then "cherry-pick" which app you want to use with that service by either enabling it or disabling it.
If you've taken photos and created content on your iDevice (ie: iPhone, iPad etc but not macOS) then transfer these using either AirDrop (if supported) or using the cable provided with your iDevice and connecting it to your laptop. You can use iTunes and the Photos app on your laptop to pretty much transfer anything from your iDevice to your laptop. Have a read of these support articles as they may help you further?
