My watch (Series 4) was showing the date as THU 22 this morning, checked my iPhone and it showed the correct date as Friday 23rd. I restarted the watch and time corrected itself. Not seen this behaviour before, is it a known issue.

It could be that the watch died and hasn't been charged in awhile meaning the extra battery for keeping the time/date correct ran out as well, I have not ever run into this issue before (Apple watch 6). Do you know if it has died recently for a long period of time? If it happens again just restart your iPhone and watch as this should result in the correct date and time on the watch.
Watch was fully charged, I have not seen issue before... As mentioned, restarting watch resolved issue
Ok well if it happens again just report it to Apple. These devices can fix most of the problems with onscreen instructions so I don't think you will have to worry about it.
Another solution that I have heard for this is to reset your network setting on your iPhone.
